Copycat Chopped Salad

Copycat Chopped Salad from Buca Di Beppo . . .

After having this yummy salad a few weeks ago, we decide we'd try to recreate it at home. We came pretty close and I don't want to forget how to make it so I thought I better post this copycat recipe.

1. combine the following chopped ingredients
-iceburg lettuce
-cucumber
-tomato
-red onion
-salame (we like the peppered Primo Taglio salame from Safeway!)
-provolone cheese
-gorgonzola cheese
-feta cheese (optional and not really necessary
-cooked prosciutto (we cooked it by placing it on a paper towel over a plate and microwaving at 30 second intervals so that it would'nt burn. It should be cooked to the point where you can easily crumble it into broken pieces)

2. add your favorit vinaigrette to the chopped ingredients--purchased or home-made-- and combine
[Italian Herb Salad Dressing

3/4 cup olive oil
1/2 cup red wine vinegar
1 tablespoon grated Parmesan or Romano cheese
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon dried oregano
pinch pepper

In a jar with a tight-fitting lid, combine all ingredients; shake well.
Refrigerate. Shake well again before serving over greens.

Yields: 1-1/4 cups]

3. serve with olives and peppers (pepperoncini or hot cherry peppers)
